Cola Chicken

One thing I will always do when I post a recipe here is give credit where credit is due. I found this one in a cookbook called Taste of Home’s Quick Cooking Annual Recipes, the 2000 edition. The recipe was submitted by Keri Scofield Lawson of Fullerton California. My kids and I LOVE LOVE LOVE this.
Cola Chicken
1/2 cup chopped onion
2 Tbsps. vegetable oil
4 boneless skinless chicken breast halves
1 can (12 oz.) cola
1 cup ketchup
1/8 tsp. garlic powder
1/8 tsp. salt
1/8 tsp. pepper
4 1/2 tsp. cornstarch
3 Tbsp. cold water
In a skillet, saute the onion in the oil over medium heat just until tender, don’t let it get too brown. Add chicken, brown on both sides. Carefully add cola, ketchup, garlic powder, salt and pepper. The skillet will be full, so stir carefully to combine! Cover and bring to a simmer, let simmer until chicken is cooked through, 25-30 minutes approximately. Remove the chicken to a plate and cover with foil to keep warm. Combine the cornstarch and cold water until smooth, add to skillet. Bring to a boil, cook and stir for 2 minutes or until thickened. Return chicken to the skillet to let it heat through.
**Note: If you use fresh boneless skinless chicken breasts, I recommend putting them on some wax paper, covering with another piece of wax paper, and then pounding them flat. They will cook more evenly that way. You can also buy the Individually Quick Frozen chicken breasts and let them thaw first, they are already flattened.
**Serving suggestion: Serve this with mashed potatoes, either made fresh or the Betty Crocker instant roasted garlic ones are good too. We like to spoon the sauce onto the potatoes-yum. I also serve frozen green peas that I steam until tender and toss with butter and salt. This meal is SO GOOD.

This sounds kind of good. I think I’ll give it a try, because I can see my daughter really liking it. I’ve only cooked with cola once before. When I lived in West Virginia a long time ago, a lot of the families I knew were hunting families. People ate a lot of venison. I was not particularly fond of it, but at one point I was underemployed since the TV station where I worked was having money issues. My neighbors would fill my freezer with deer meat and beggars, well they certainly can’t be choosers. I tired a lot of recipes and one that most people around there use is to put a dear roast in the crock pot with a 2 liter of soda. Not too bad.

Cola? Mixed with Chicken? Hmm, that sounds weird. Although I do have a recipe for beercan chicken, where you stick a chicken’s bottom on an open can of beer. As it cooks the beer steams up into the cavity keeping it moist. So I suppose cooking with drinks is not unheard of :)

Mmm sounds pretty good! You’ll have to start taking some photos of the food either as you cook it or the finished product. :)
Theothebear - I’ve had beer butt chicken and it’s really good and so easy to make too! I’ve also had it with coke - cooked on the grill the same way the beer butt chicken is cooked. Both are moist and delicious.
Think of coke or beer as a marinade / tenderizer.

That’s interesting. I remember my mother telling me that she makes a 7Up Cake. I had never heard of that before.

Sounds yummy. I, too, have cooked with cola. I have a recipe for roast in a crockpot that calls for a can of cola. Love that crockpot cooking! :)
I can’t stand to cook chicken that I make. Maybe I just haven’t found the right recipe yet. Will have to get this one a try. Thanks!
