You’ll be seeing a shift in focus here on MomCooks, because I have decided once and for all to make a major change in the way I eat. I have changed to a Low Glycemic Index diet, and I already feel a lot better and I’ve lost three pounds in five days. My body is sure detoxing from the sugar withdrawal though, I am exhausted much more easily. But I know that will go away as my body adusts to less sugar.

The program I’m following mostly is called The G.I. Diet by Rick Gallop. I don’t have to give up carbs completely, just make better choices. I can have lean protein like chicken, turkey, Canadian Bacon, extra-lean ground beef, eggs and egg beaters. I can have low fat dairy products like 1 percent milk, low fat cream cheese, Promise Ultra margarine spread, and fat and sugar free yogurt. I can eat any kind of pasta, which was a surprise, because most diet plans will tell you that pasta makes you fat. In truth, pasta cooked “al dente” (to the bite, meaning not mushy), has a low impact on blood sugar. What makes pasta unhealthy is adding oil or butter to the noodles, and covering it with greasy meat sauce. Yuck. I can have stone ground whole wheat bread, which is surprisingly tasty when toasted and smeared with cream cheese. I can use a small amount of olive oil for cooking. I can have all the vegetables I want, and most fruits except for bananas, watermelon and pineapple, which are too high in sugar for weight loss (and also my favorites, of course!).

So, last night for dinner, for example, I made an egg scramble. I sauteed frozen peppers and onions in a little olive oil, then added chopped tomato and two chopped slices of Canadian Bacon. I sauteed that all together, then dumped it out onto a plate, and into the skillet went a quarter cup of Egg Beaters with Cheese and Chives, and a whole large egg mixed together. I scrambled the eggs, then added back in the veggies and meat. It was a huge, filling, DELICIOUS dinner. I didn’t even have room for a piece of toast, which I ate later as a snack.   • Good luck! I too find it hard the first week to adjust to the lower carbs (or the low bad carbs)… I’m dragging this week big and bad — so much so I cheated tonight and have a glass vino rouge! LOL!

  • That’s awesome. I did a low gylcemic diet for a while…and now I am going to give Dr. Ian’s Fat Smash way a go. A lot of it is low glycemic…since the beginning phases cut out all unrefined sugars. And since I am a veggie girl…the 9 days without meat won’t bother me much. lol

  • Scrambled eggs are one of my favorite meals – even if it’s just scrambled eggs, milk, cheese and seasoning. When they are fluffy and warm – I feel like its a treat plus the boys are fussy eaters but love my scrambled eggs. I will have to try your recipe!

    Mimi-thanks! I honestly never thought it would be that easy to give up sugary carbs, nor did I think I would EVER lose five pounds in one week! It’s almost too good to be true!

    Shelley-I checked out the Fat Smash book from the library, it is a hardcore diet! I wouldn’t be able to follow something that strict, but I did copy down some of the recipes and the snack ideas. I’m getting ready to post my low carb yummy veggie and ground turkey spaghetti sauce, and a recipe from the Low G.I. Diet book for whole grain Apple Raisin muffins. So please come back and visit me again!
