Healthy veggie spaghetti sauce-yummy too!

I’ve already mentioned how surprised I was to find that any kind of pasta, even the regular white flour kind, is low on the glycemic index. That’s because it’s made from a coursely-milled flour, as opposed to the heavily milled and bleached kind. Spaghetti is my absolutely favorite food, so I was so relieved that I wasn’t going to have to give it up. I just needed to keep the sauce low g.i. friendly. Here’s the sauce I came up with the other night, with a few tweaks, I think it would be perfect!

Veggie Spaghetti Sauce
Makes a whole skillet-full, I use about a half a cup to top a cup of cooked spaghetti, so it probably makes six servings.

One tablespoon olive oil
One cup frozen mixed peppers and onions
One spoonful minced garlic from a jar
One 14 ounce can petite diced tomatoes and onions
About a cup full of Hunt’s No Sugar Added Italian Sauce (you can find it next to the spaghetti sauce in the grocery store)
Dried Italian Seasoning

Warm the olive oil in a large skillet, carefully add the frozen peppers and onions and the minced garlic and saute until the peppers are thawed and soft. Drain some of the liquid from the can of tomatoes and add to the skillet, stirring until combined and heated through. Pour in the Italian Sauce and sprinkle with Italian seasoning, taste, and add a sprinkle of salt if needed. Stir it all together and let it gently simmer on the stove until the liquid is slightly reduced and thickened. Serve over hot cooked pasta with salad and green veggies on the side.

Lady Rose- I have never tried spaghetti squash but I’ve seen it mentioned in diet books-is it good? I think I should be brave and just try it! Thanks for visiting and especially for leaving a comment ;)

I really like the spagetti squash – the first time I tried it I wasn’t sure so I was pleasantly surprised.

Just cut one in half, place in a large pan with a couple inches of water and bake – until it’s fork tender. (I’m sure there are more specific instructions around some where – but I think it was like 350 degrees for 30 minutes).

Once cooked use a fork to pull through the squash creating “spagetti”.
