Back-to-School Fun With Food

I love the Kraft website, and this post they did for back to school is yet another place to find great ideas for not only packing lunches, but starting your kids’ day off with a great breakfast, and getting them a snack after school.

I especially love their Lunch Box Builder page,  with a recipe for a sandwich, wrap, and salad, and then suggestions for the side dishes and drink. Every lunch includes either a fruit or vegetable serving, milk or 100 % fruit juice, and then a fun snack like mini oreos or cheese crackers. I have no problem putting cookies or crackers in my boys’ lunches as long as they eat the fruit or vegetable too!

The Kraft Foods “Kids’ Favorites” page has six recipes each for breakfast, lunch, dinners and desserts that are nutritious and easy to prepare. My kind of recipes!!

Reader’s Digest’s RDLiving website has a great Back to School page with snack recipes, lunchbox ideas, and sandwich filling recipes.  I like this snack, called “Loony Lips”, I think my son would like it to!
You Will Need
1/4 cup chunk-style peanut butter
2 tablespoons reduced-fat soft-style cream cheese
1/8 teaspoon ground cinnamon
1 medium-size red apple, cored and cut into 16 wedges
Miniature marshmallows

What to Do
1. In a small bowl, stir peanut butter, cream cheese, and cinnamon until well mixed. Spread 1 side of each apple wedge with a thin layer of the peanut butter mixture.

2. Stick together 2 wedges to make “fat lips.” Tuck in a few marshmallow “teeth.”

Serves: 8
