Finger-Lickin’ Chicken dinner

From the January/February 2006 issue of “Taste of Home: Quick Cooking” comes this delicious complete dinner. Chicken coated in a zesty sauce and crushed french fried onions, served with Four Ingredient biscuits and spicy green beans, is a dinner our whole family loves! And it’s easy to make a little more of each recipe to serve more than four people.
Tasty Onion Chicken
1/2 cup butter, melted
1 tablespoon Worcestershire sauce
1 tsp. ground mustard (powdered, sold with the spices)
1 can (2.8 ounces) french-fried onions, crushed
4 boneless skinless chicken breast halves
In a shallow bowl, combine butter, Worcestershire sauce and mustard. Place onions in another shallow bowl. Dip chicken in butter mixture, then coat with onions. Place in a greased 11×7x2 baking dish, drizzle with remaining butter mixture. Bake, uncovered, at 400 degrees for 20-25 minutes. Check that the chicken is no longer pink inside by cutting through the edge of one of the pieces before serving. Serves 4.
Note: I use the large boneless skinless chicken breast sold frozen in 3 pound bags. My daughter and I split one, so 4 is usually enough. If you serve more than 4, just adjust all the seasonings up, use a little more melted butter, and either another can of french-fried onions or add some crushed cornflakes to stretch it out.
Sour Cream Pan Biscuits-only 4 ingredients!
2 cups biscuit/baking mix
1 teaspoon sugar
1/2 cup club soda
3 tablespoons sour cream
In a bowl, combine all ingredients, stir just until moistened. Drop into six mounds on a 9-inch round baking pan coated with nonstick cooking spray. Bake at 400 degrees for 20 minutes or until golden.
Note: To make more than six biscuits, just adjust up each of the ingredients, keeping the proportions the same. For example-3 cups baking mix, 1 1/2 teaspoons sugar, 3/4 cup club soda, and 4 1/2 tablespoons sour cream makes about 9 biscuits. Bake longer, around 30 minutes or until all are brown. Also, since these bake at the same temperature as the chicken, you can put them in the oven at the same time, and add about 5 minutes to the cooking time.
Spicy Garlic Green Beans
1 pound fresh green beans, cut into 1 inch pieces
1 teaspoon minced garlic
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1 tablespoon canola oil
In a large skillet, saute beans, garlic, red pepper flakes, and salt in oil for 10-12 minutes or until beans are tender but still crisp.
Note: careful with the red pepper flakes, a little goes a long way!

Thanks for this! I’m not a fan of green beans, because I think they’re rather bland, but I will give this a try.

I make green beans like that most of the time — except for the red pepper flakes. Never thought of that! I’ll try it next time. You can also use frozen green beans instead of fresh; I also prefer olive oil.
