I just found this recipe and it sounds so good I wanted to post it here right away before I forget where I found the link! I’m not even sure what I would serve this with, honestly it sounds so good, I could probably just eat this with nothing else :)

Crockpot Creamy Red Potatoes
Ingredients
# 2 pounds small red potatoes, quartered
# 1 package (8 ounces) cream cheese, softened
# 1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
# 1 envelope ranch salad dressing mix
Directions
Place potatoes in a 3-qt. slow cooker. In a small mixing bowl, beat cream cheese, soup and salad dressing mix until blended. Stir into potatoes. Cover and cook on low for 8 hours or until potatoes are tender. Yield: 4-6 servings.
It really doesn’t get much easier than that! And now I know exactly what to serve this with-Ham, of course. Some nice lean ham, these potatoes, some steamed peas-YUM.

Definitely sounds like a great recipe and I’ll have to try it now that I’m down in Florida for the winter. The small red potatoes are so expensive in the stores back up north in Pennsylvania but here in Florida I can get them at market much cheaper.
This sounds amazing…I love potatoes and they are very healthy for you as well. Can I borrow you as a mom for a bit to cook for me *evil grin* ;)
RecipeBits-Great! I hope you enjoy the recipe!
Matt-Sure, you can borrow me! As long as I don’t have to grocery shop or do the dishes afterwards, it would be like a vacation :)
OH MY GOSH!! I WANT!! I WANT!! What time shall I be over? I think we’ll be making those tonight!
Yummm, that sounds yummy. Of course my crockpot is busy right now making the turkey and rice, but using chicken instead.
