Crockpot Turkey and Rice

I saw this recipe on BCMom’s cooking blog, and she got it from another site, so it’s making it’s way across the blogosphere I guess. It sounds really good, like something you want to eat on one of those freezing cold Michigan winter afternoons, to warm you up from the inside. I’m wondering if it could be made with chicken instead, I’m guessing it could. I’m going to post the recipe now so I have it for when I’m ready to make it, and I’ll let you know how it turns out!

Crockpot Turkey and Rice

This easy turkey and rice recipe is cooked in the crockpot, with vegetables, rice, leftover turkey, and seasonings.

INGREDIENTS:

2 cans (10 3/4 ounces each) cream of mushroom soup
2 1/2 cups water
2 1/2 cups uncooked converted white rice
1 cup sliced celery
2 cups cubed cooked turkey
2 cups frozen peas and carrots
1 teaspoon poultry seasoning
2 tablespoons minced onion

PREPARATION:

Pour soup and water into Crock-Pot and mix. Add remaining ingredients and stir. Cook 5 to 7 hours on Low or 2 1/2 to 3 1/2 hours on High. Check from time to time to make sure rice does not get mushy.

    See, I can’t get past the cream of mushroom soup. Otherwise you had me. I would have even foregone the celery even though I don’t like that either. I just don’t like soup :/

    How can you not appreciate soup!? Although a great chicken soup is great for me I always love to try new ones.

    Blueyes-I am not good at substitutions but I suppose you could replace the soup with some kind of homemade cream sauce, but I don’t know for sure! Also, the comment plugin is showing me that you are getting a two thousand dollar bonus? Holy cow!

    I can’t tell if it is soupy or more thick like a casserole, I need to actually make it and find out!

    I really need to check this blog out more often! This recipe does sound good, doesn’t it? I still haven’t tried it, but I copied it and posted just so I wouldn’t lose it again.

    I think it will turn out more like a casserole than a soup. And, yes, I think turkey and chicken can be used interchangeably.

    I tried this recipe this week. I know how to cook. I usually listen to myself. This time, I ignored my little voice and followed the recipe. NOT good! There is too much rice in this recipe. It should be 1 cup, or at most 1-1/2 cups. This cooked up all the rice and was so dry - some of the rice was even still a little crunchy because it did not cook.

    Since I hate to waste anything, I added some turkey broth and water to it, and a can of cream of chicken soup. So now I have a nice creamy rice, turkey, vegetable dish - which tastes really good, like I imagined this recipe to be in the first place. And I have a whole lot of it! Decrease the rice, and I think it will be really good.

    Anna, now that I look at it, you are right. Isn’t the general rule to have twice as much liquid as rice? So thanks for the tip!
