Recipes for Bean Dips and Bleu Cheese Walnut Dip

Here’s some yummy ideas for finger foods to serve at your Super Bowl gathering this weekend, or any time you want to impress your guests with tasty appetizers! From Women’s Health.
“Tipsy Beans”-serve with Tostitos White Corn Scoops
In a medium skillet, heat 1 Tbsp extra-virgin olive oil, 1 Tbsp jarred minced garlic in oil, 1 tsp ground cumin, and 1 tsp oregano over low heat until sizzling and fragrant. Stir in 1 can (15.5 oz) pink beans (drained); salt to taste. Increase heat to medium-low. Add ¼ cup tequila and simmer 5 minutes. With back of a large spoon, smash beans until mixture is creamy. If mixture is too thick, stir in 2 Tbsp hot water. Just before serving, spoon bean mixture into 42 Tostitos. Top each with several small cubes of avocado and 1/8 tsp sour cream if desired.
Makes 21 servings (2 Scoops with 1½ tsp beans each).
Per serving: 50 calories, 2 g fat (0 g saturated), 76 mg sodium, 5 g carbs, 1 g fiber, 1 g protein
Blue Cheese-Walnut Dip-Serve with Kellogg’s All-Bran Garlic Herb Crackers
In bowl, mash 1 c part-skim ricotta cheese, ½ c crumbled blue cheese, and ½ tsp coarsely ground black pepper with a fork, until just blended. Spread in shallow serving dish. Sprinkle with 2 Tbsp chopped walnuts. Serve with 72 crackers (about half of a 10-oz bag).
Makes 18 servings (4 crackers with 1 tsp dip on each). Per serving: 64 calories, 4 g fat (2 g saturated), 70 mg sodium, 5 g carbs, 1 g fiber, 3 g protein
Provencal White Bean Dip-Serve with Kashi TLC Roasted Garlic & Thyme Party Crackers
In small microwavable bowl, combine 1 Tbsp extra-virgin olive oil, 2 tsp jarred minced garlic in oil, and 1½ tsp herbes de Provence. Cover with microwave-safe plastic wrap. Cook on high until sizzling, about 1 minute. Cool to room temperature. Place 1 can (15 oz) of cannelloni beans (drained) in food processor with metal blade. Add oil mixture, ¼ c orange juice, and ¼ tsp Worcestershire sauce. Process, scraping container as needed, until coarsely pureed, about 45 seconds. Transfer to serving dish. Sprinkle with slivers of orange peel and paprika for garnish if desired. Serve with 21 crackers.
Makes 21 servings (1 cracker with 1 Tbsp dip). Per serving: 54 calories, 2 g fat (0 g saturated), 90 mg sodium, 7 g carbs, 1 g fiber, 1 g protein
