Four Foods on Friday

I’m finally participating in the great Four Foods on Friday Meme started by Val! These are the questions and my answers:
#1. American cheese. Sliced fresh or prepackaged processed cheese product?
#2. What is your favorite cracker?
#3. What hot breakfast cereal do you like? Think oatmeal, farina, grits, etc.
#4. Share a recipe that uses corn.
#1-I like Kraft Deli Deluxe slices the best. They are thicker and taste more like actual cheese. Plus they make excellent grilled cheese sandwiches!
#2-I love crackers. I always have a box of our grocery store’s version of Ritz crackers in the cupboard, I love Triscuits (especially with peanut butter), and I have been buying Nabisco Original Graham Crackers (the ones in the red box) since I moved to my first apartment. My Mom often gave us graham crackers and milk for a bedtime snack, and she always bought Nabisco, so that’s what I buy.
#3-I grew up eating Ralston Hot Wheat cereal. It’s not as popular as oatmeal, but it is absolutely delicious with milk and a little sugar sprinkled on top. You can also bake muffins with it, I should post that recipe!
#4-I love this recipe that has several different names-I call it Corn Casserole:
1/2 c. butter (1 stick)
2 eggs, beaten
1 (18 oz.) can corn
1 (18 oz.) can cream style corn
1 (8 oz) container sour cream
1 (8 1/2 oz.) box Jiffy cornbread mix
In a mixing bowl, combine butter, eggs, cans of corn and sour cream. Add the cornbread mix and stir well. Pour into a long shallow baking dish. Bake in a 350 degree oven for 45 minutes. Serves 8.

Your recipe for Corn Casserole sounds delicious. I like the idea of the cornbread mix in it. I might try substituting plain yogurt for the sour cream.

I love quick and easy recipes & am a big fan of corn, so this one is going in my recipe file.

Elizabeth, I tried to install the smaller “Mom Cooks” button you have available on your sidebar. It shows up fine on my homepage that I see, but it’s just an empty box on other people’s computers. Should I download the picture and then upload it?
Also, I just read where you enjoy going to thrift stores. I enjoy those, too, and have found some great things at thrift stores.

I have a very similar corn recipe that is called “corn soufle” (I don’t know how to spell souffle!) It’s really yummy!
