Menu Monday: Monday May 19th, 2008

By Elizabeth | May 19, 2008

Here’s what I’m planning to make this week. I’ll be buying as much as possible at Aldi and watching the prices very carefully. There won’t be much room in the budget for snack type foods this week.

Breakfast:

Cold cereal, homemade pancakes, frozen waffles, scrambled eggs, English Muffins

Lunches:

Crazy Eights and Safari Lunch, recipes on this Brown bag lunches your kids will eat post.

Good ole’ PB&J with milk, carrots, and a few homemade oatmeal chocolate chip cookies-Ironically, the host of Menu Monday, Laura from I’m an Organizing Junkie, posted a healthy oatmeal chocolate chip cookie recipe a few days ago, the recipe comes from Thrifty Jinxy. So I’ll make hers and let you know how it turns out.

Dinners:

Frozen Assets Spaghetti Sauce
Meal 1: Spaghetti with sauce, garlic bread, corn
Meal 2: Lasagna, Speedy Parmesan Rolls, peas

Meal 3: Chicken Broccoli Divan
Buttered Egg Noodles
Tossed Salad

Meal 4: All-American Hamburgers on buns
Seasoned frozen french fries
Steamed peas

Meal 5: Friday Night Pizza Night

Meal 6: Leftovers!

If you’re interested in participating in Menu Plan Monday you can find all the guidelines here.

Congrats on your menu-planning! My husband cooks for our kids; they tend to prefer his cooking (I always give in to my desire for gourmet cooking which the husband loves and the kids, ummmm…..don’t?).

However, I do make their school lunches. Can’t hear any complaints while they’re at school. :)
