Sometimes a BLT really hits the spot

For lunch yesterday, I made BLTs. For the four of us, I used a whole package of bacon, which I cooked in the oven because I like it to be flat and crispy. Just line rimmed baking sheets with a double layer of foil and place the bacon slices flat and not touching, bake at 350 degrees until they are as crispy as you like, it took about 20 minutes to get this:

Tear up green leaf lettuce (I never use Iceberg, it has no nutritional value, plus green leaf is pretty):

Slice two large tomatoes into medium-thick slices. Be prepared for your toddler to eat several:

Toast some white bread and slather with mayonnaise, then layer the bacon, lettuce, and tomato on top. that’s it! My son took this photo and he’s still learning about holding the camera steady, so it’s a little blurry, but here’s Kaitlyn and I showing off half a delicious looking BLT!

    Lately I’ve been using all my bacon for delicious bacon-ranch pasta salad, but I’d really like to have a BLT soon. I just wish bacon were a little cheaper!

    I can’t wait for fresh tomatoes to grow in my garden in the next month or so! They will go great on a BLT (I like mine with a little mayo)!

    Don-I edited the post because I forgot to say that the bacon, lettuce, and tomatoes go on toasted white bread with some mayo! So good!

    Laurie- I only serve Grilled Cheese sandwiches with tomato soup! But maybe next time I’ll try it with a BLT.

  14. Oh yes, I will be back, Elizabeth…in fact, here I am! I only serve grilled cheese with Tomato Soup, too. :) And I have to have Miracle Whip on my BLT’s…YUM! (Guess what’s for lunch today? lol)

    hmm, this is making me hungry for blt. I don’t generally like bacon too crispy , but i think ill try the oven thing.
