Menu Monday-June 30th 2008

I’m using recipes from the August 2008 issue of Taste of Home Simple & Delicious to plan this week’s meals. Why they sell an issue in June that is labeled August is beyond me. My plan for this week:

Today-I was in the mood for fried chicken, so Chris picked up KFC on the way home along with their mashed potatoes and gravy, and I steamed frozen peas for our veggie.

Tuesday-”Greek Chicken Dinner” I’m not sure what makes this Greek exactly, but it’s Yukon Gold potatoes, a cut up chicken with the skin removed, onions, garlic and seasonings cooked in the crockpot. It looks delicious! I’ll add baby carrots to the recipe and serve it with dinner rolls.

Wednesday-”Ham and Cheese Casserole” Cooked egg noodles, cubed cooked ham, Cream of Chicken soup, frozen peas (thawed), milk, butter, and shredded Colby-Jack cheese. Yum! I’ll serve it with a tossed salad and probably crescent rolls.

Thursday-Really Easy Shepard’s Pie I serve this with the corn and peas that are left over in the bags after I measure out the recipe amounts. I think I’ll make a dessert too, something I rarely do, but Simple & Delicious has Contest-Winning Frozen Dessert recipes in this issue, and the one called Mint Sundae Brownie Squares sounds delicious!

Friday-4th of July! We’re doing a cookout, so I’ll make All-American Burgers, corn on the cob, potato salad, and fixings to make S’Mores for dessert! I need to look up potato salad recipes, the one my Mom made was the best I ever had, but she never wrote it down. I think it was just potatoes, hard cooked eggs, diced onion, diced green pepper, mayonnaise and a bit of yellow mustard, and she always sliced radishes over the top so it would be pretty. I’m sure I can find something similar if I do enough Google searches :)

  • I just had to respond to the Greek Chicken Dinner, since I run a Greek food blog! :-)

    The crockpot recipe might or might not be an adaptation of a traditional Greek recipe; most of the “Greek” recipes that I run across aren’t really very Greek. In this case it depends on what the liquid and seasoning are. A few examples of typical Greek combinations would be:

    chicken and potatoes simmered in tomato sauce with cinammmon

    chicken and potatoes simmered in tomato sauce with garlic and onions

    chicken and potatoes cooked olive oil with garlic and onions, spiked with lemon juice

    But whatever the provenance of your recipe, I hope it turns out well and you enjoy it!
