Easy Low Fat Nachos

We had soft tacos for dinner last night, and whenever I eat tacos, I always want crunchy tortilla chips and salsa on the side. To keep the fat grams down but still get the crunch, I used Baked Tostitos Scoops, which are great because they are cup-shaped so they hold all your yummy low fat fillings. A serving is 15 Scoops which is 120 calories, I used 7 for myself and counted 60 calories.
EASY LOW FAT NACHOS FOR ONE:
7 Baked Tostitos Scoops
2 Tablespoons Old El Paso Fat Free Refried Beans, warmed
2 Tablespoons Pace Picante Sauce or other salsa
Place the Scoops on a plate facing up, and using a small spoon, divide the refried beans equally between each, then top each with a dollop of picante or salsa. That’s it! Because I used less of the beans and salsa than what the labels consider a serving, I guesstimated this to be 100 calories and 2 grams of fat. And I got the yummy crunchiness I wanted!

Robin-Thanks! And they are easy to customize, you can add a sprinkle of cheese or some sour cream or guacamole, whatever you like on nachos can go in these little cups!
