Easy Pancakes made with Flaxseed Meal

Flaxseed has been getting a lot of buzz over the last year simply because it is incredibly nutritious. A 2 tbsp. serving of ground flaxseed meal has 1.33 grams of Soluble Fiber and 2.67 grams of Insoluble Fiber, which aids in digestion and helps you feel more full. Flaxseed is also a wonderful source of Omega 3 Fatty Acids, which play a crucial role in brain function as well as normal growth and development. There is 2400 mg of Omega 3 in 2 tbsp. of ground flaxseed meal.

Flaxseed Pancake recipe

To get my kids used to eating ground flaxseed meal, I’ve been adding it to our favorite pancake recipe. I’m only using the 2 tbsp. serving in a batch of pancake batter that makes about seven pancakes, but my goal is to work up to getting them to each consume 2 tbsps. so they get the full dose of fiber and Omega 3. Flaxseed meal has a nutty flavor, and when added to the Bisquick pancake recipe, makes the pancakes taste like they are made with a whole wheat mix. So far the kids aren’t complaining!

RECIPE:

2 cups Bisquick baking mix
1 cup milk
2 eggs
2 tbsp. ground flaxseed
2 tbsp. sugar
2 tsp. baking powder
2 tsp. vanilla

Dump everything into a bowl and stir well until combined. Let the batter rest while you heat up a large skillet to about 325 degrees. I use a large rectangular electric skillet that makes four pancakes at once, you can also use a frying pan, heat it over medium heat. Spray the skillet lightly with cooking spray, then ladle on the batter in circles. When the tops look bubbly and the bottoms are set, flip each pancake over. Serve immediately with syrup, we use Maple Farms Sugar Free Syrup. Delicious!
