Brown Bag Lunch Tip-A twist on traditional sandwiches

There’s no rule that says sandwiches have to be made on bread. Any kind of sandwich filling, from meat and cheese to peanut butter and jelly can be made with the following:

Flour tortillas-spread with fillings, roll up, then roll in Glad Press N Seal or place in a baggie

Pita Bread-Fresh pitas are better than the preservative-laden ones sold in the bread aisle, look near your grocery store’s bakery or visit a local Middle Eastern grocery for the freshest pitas.

Crackers- You can make mini cracker sandwiches using round Ritz-type crackers, or rectangular Club-type crackers. And you’d be surprised how good peanut butter tastes spread on graham crackers!

Rolls or Biscuits- Last week, we were completely out of bread at lunchtime. I found a can of Grands! Biscuits in the fridge, baked those, let them cool, then split them in half, spread one half with a bit of lowfat mayo and piled ham and cheese on the other half, then put the halves back together. You should have seen the look on my boys’ faces as they gobbled them up! Large soft dinner rolls would work too.

Hamburger or Hot Dog Buns- You know how when you serve hamburgers or hot dogs, there always seems to be one or two left? Use them for sandwiches! A hot dog bun lined with a piece of green leaf lettuce, a lowfat cheese slice cut in half and placed end to end, and a few slices of thin sliced ham will make a fun alternative to a traditional ham and cheese sandwich.

That reminds me – I really want to make pita bread. Now, if I can just remember where I found/put the recipe I was going to use…

These are some really good ideas. The same old sandwich can get boring day after day. I try to switch up the fillings, but I never really thought about switching the bread around too.

Anna- I want to learn how to make tortillas. The fresh ones you get at mexican restaurants are a million times better than the ones that come in bags at the grocery store. Let me know how the pita turns out!
