Healthier Cream of Tomato Soup

Hey everybody, I’m sorry it’s been so long since I updated! We went to the circus last Saturday night, and we must have sat near someone who was sick. One by one each of us has come down with some version of the same thing-sinus pressure, extreme fatigue, upset stomach. Lovely.

For lunch today, I felt like soup. I found a can of Campbell’s tomato in the pantry. Now, I used to make tomato soup by filling up with can with 2% milk or even with Half n Half, but now that I’m watching my calories, I knew I needed a lower fat option. You can make condensed soup with all water, but I like tomato to be a little creamy. The soup was one of the large family sizes, 26 ounces. I poured in exactly four ounces of fat free half n half, and the rest of the way up with water. Kaitlyn helped me stir the pot (with very close supervision so she didn’t put her hand down on the hot cooktop).

I was surprised at how creamy just that little bit of half n half made the soup taste. I like to crumble saltine crackers into mine, Kaitlyn likes to dip crackers in. I estimated that one cup of this soup was 200 calories and 1.5 grams of fat, plus 60 calories for the crackers. And it was really filling!
