Four Foods on Friday #52
I missed last week’s questions, so I’m posting this now for this coming Friday so I don’t forget :) The questions for this week are about dairy products.
#1. Name something you use cream cheese in/on.
#2. Do you use yogurt in any recipes?
#3. Macaroni salad. What do you like/put in yours?
#4. Share a recipe that you use sour cream in.
#1. I use cream cheese on toasted bagels! My favorite is cinnamon raisin.
#2. There’s a brand of boxed brownie mix called “No Pudge”, and you combine the dry mix with fat free vanilla yogurt. That’s the only “recipe” I use yogurt in that calls for cooking. My favorite way to eat yogurt is this:
3/4 cup fat free vanilla yogurt
3/4 cup fresh blueberries
AllBran Bran Buds
Combine all three into a large bowl. Really high in fiber so it fills me up for hours.
#3. Confession- I have never made macaroni salad. Ever. I buy it from the deli at the grocery store. I think it’s just cooked macaroni, finely diced onion and celery, and mayo.
#4. Jiffy Cornbread Casserole has sour cream in it, and I could eat it every day!
INGREDIENTS:
1 can cream style corn
1 can whole kernel corn, drained
1 stick butter, melted
1 egg
1 box Jiffy cornbread mix
8 oz. sour cream
DIRECTIONS:
Mix both cans of corn together with melted butter. Add slightly beaten egg and cornbread mix. Fold in sour cream. Pour in long casserole dish (lightly greased or spray with Pam). Bake at 350 degrees for approximately 45 minutes (or until knife inserted comes out clean).

Your casserole sounds really good, and fattening- bet Paula would LOVE it!
Adding it to my files so we can try it one of these days- I need to get some cream style corn first. :)
I don’t make macaroni salad either but I make a helluva pasta salad and that has noodles. ;)

1. I use cream cheese on bagels: plain, poppy seed or potato. I also want to use it in this recipe:

2. I make parfaits occasionally. I once made a chicken pita recipe with it where the chicken was mixed with yogurt. Very good. I’ve always wanted to make it again, but I haven’t.
3. Macaroni Salad: One way: Mayo, Chicken, Swiss Cheese, Celery and a little bit of dry ranch dressing mix.
Another way: tuna, onions, celery seed, mayo.
4. Sour cream – stroganoff, tacos

That casserole sounds perfect as a side dish to a Mexican recipe.
I forgot I had a No-Pudge mix in my pantry. Are they really good? I’ve hesitated to make them because I heard they get really hard after a day or so.
