I didn’t have a good photo of these, so I searched Flickr and found this one. These muffins have raisins in them, which would be an option for this recipe. Thank you to anna maria regina for permission to use the photo.
INGREDIENTS:
1 1/2 cups all-purpose flour (stir flour lightly before measuring)
1/2 cup old-fashioned oats
1/2 cup chopped walnuts (optional)
2 teaspoons pumpkin pie spice
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup Libby’s 100% Pure Pumpkin (or other brand)
1/2 cup honey
1/3 cup apple juice
2 large eggs
1/4 cup vegetable oil
2 tablespoons old-fashioned oats
DIRECTIONS:
Preheat oven to 375 degrees. Grease a 12-cup muffin tin or line with paper baking cups.
Combine flour, 1/2 cup oats, nuts, pumpkin pie spice, baking powder, baking soda and salt in large bowl. Beat pumpkin, honey, apple juice, eggs and vegetable oil in medium bowl. Add to flour mixture; stir just until blended. Spoon into prepared muffin cups, filling 3/4 full. Sprinkle the 2 tablespoons oats evenly over the tops of the batter.
Bake for 23-27 minutes or until toothpick inserted in center comes out clean. Serve warm.

Ohhhh that sounds yummy. I might have to try these tomorrow – I don’t think the pie pumpkin I bought last month is gonna last till Thanksgiving, so that works!
