Sweet n Tangy Slow Cooker Chicken

It’s WAY too hot to be turning the oven on, so I’m looking for slow cooker recipes that do the work without heating the kitchen. I’ll serve this with instant mashed potatoes (which take just a minute on the stovetop) and a salad.

Sweet n Tangy Slow Cooker Chicken

INGREDIENTS:

* 1 medium onion, chopped
* 1-1/2 teaspoons minced garlic
* 1 broiler/fryer chicken (3 pounds), cut up and skin removed
* 2/3 cup ketchup
* 1/3 cup packed brown sugar
* 1 tablespoon chili powder
* 1 tablespoon lemon juice
* 1 teaspoon dried basil
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 1/8 teaspoon hot pepper sauce
* 2 tablespoons cornstarch
* 3 tablespoons cold water

DIRECTIONS:
In a 3-qt. slow cooker, combine onion and garlic; top with chicken. In a small bowl, combine the ketchup, brown sugar, chili powder, lemon juice, basil, salt, pepper and pepper sauce; pour over chicken.

Cover and cook on low for 4-1/2 to 5 hours or until chicken juices run clear. Remove chicken and keep warm.

Transfer cooking juices to a saucepan. Combine cornstarch and water until smooth; stir into juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken. Yield: 4 servings.

    Salsa Chicken Recipe,

    4 chicken breasts (we usually use six so we have left overs)
    1 can rinsed black beans
    1 bag frozen corn (we use use two cans of canned corn)
    1 jar salsa (we use more, enough to cover)

    Mix all together in crockpot and cook 8-9 hours on low. Shred chicken w/ 2 forks, but really as soon as you pick it up or mix it, it just falls apart and shreds apart itself. You can eat it in tortillas with shredded cheese on top or over rice.

    The original recipe says to put it on for 8 hours on low, but we have found that it dries out the chicken so we have started putting on for a shorter time. We have started putting it on for 6 1/2 hours on low and it comes out great!

  • This recipe sounds really good. I think I’m going to have to try it.

    I’ve made a version of that salsa chicken, too. It’s so good! Use boneless skinless breasts. You can throw them in frozen, that’s what my friend does. Then her recipe calls for cream cheese melted on top at the very end. I usually just put some grated cheddar on top.

    That sounds so good! Slow Cookers are great and so handy when the weather gets really hot. I use boneless, skinless chicken breasts, also.

  • Anna-thanks for letting me know I can start with the chicken frozen. Aldi sells 3 lb bags of b/s chicken breast for $3.99 so I always have at least one in the freezer!

  • I love to eat meat, and chicken is probably my favorite. I stopped by to see one recipe and was granted a second bonus recipe. Both of them sound really good, and since I have’t had breakfast/lunch yet (I slept in)and I am starving hungry. As I sit here typing, I’m trying to think of how I could make one of these recipes without having all the ingredients. But at the same time, I don’t want to butcher them. And thanks for reminding me about Aldi, I always forget about them because I used to live about a block from a Walmart Super Center.

One of the characters It features is Barbara Kowalcyk, a mother who lost her son to E. coli after all eating together at a fast food restaurant during a family vacation. Her story, along with the testimony of experts like Michael Pollan (The Omnivore’s Dilemma) and Eric Schlosser (Fast Food Nation) brings to light the importance of not only know what our children are eating, but where it came from, how safe it is, and how our current industrial food system has hidden the real costs of our food chain from us.

    I would urge every concerned parent to see this film. It’s not about fat or thin, it’s about an entire generation of children, born after the year 2000, in which one out of every three will have early onset diabetes. It’s about feeling secure in what your children are eating, and about educating them to make good choices themselves.

    The more educated we are as parents/grandparents/aunts and uncles/educators, the better off we are to give our children the knowledge and the ammunition to make better choices and lead healthier lives.

  • this looks delicious. I would serve it with thai rice instead of mashed potatoes during the hot months. That makes it a bit lighter and more exotic.

    How spicy does it end up? Would you advise adding a little more chilli – even proper chilli peppers or do you think that would spoil the taste?
