Beet & Apple Salad

Beets are packed with nutrients, naturally sweet, low in calories and make for a great summer dish. Beets are also a fantastic immune system booster and are even thought to have cancer prevention qualities. This recipe combines beets with apples and sweet pecans for a tasty crunch.

Beet and Apple Salad

Ingredients:

· 1 Tbsp brown sugar

· 2 tsp butter

· 1/3 cup pecan halves

· 1 can (14-1/2 oz.) DEL MONTE® Sliced Beets , drained

· lettuce

· 1 medium Golden Delicious apple , cored and diced

· 3 Tbsp oil

· 5 tsp cider vinegar

Directions:

1. In small skillet, combine sugar and butter; heat until melted. Stir in pecans; cook over low heat 3 to 4 minutes or until caramel color, stirring frequently. Remove and set aside; cool.

2. Place beets and apple in lettuce-lined serving dish. Combine oil and vinegar. Pour over salad; toss gently. Just before serving, add nuts.

I couldn’t find a photo of this salad on the Del Monte site, but here’s a Beet/Apple/Walnut salad from Vegan Lunch Box that I found on Flickr with a Creative Commons Non-Commercial License.  Meaning it’s okay to borrow it :)
