I was browsing online for a seven day menu planner, because I’m running out of ideas for what to make, and I found a site called Wellness First. From the URL it looks like it’s from the University of Georgia (?) and not only do I love the menu, but you have to check out the recipe section. I love the food icons next to each ingredient and the step by step instructions. These would be easy enough for my son to make!

I’m planning on making what they call Low-Fat Mexican Ole Casserole because it sounds really good.  If you are wondering why I didn’t post a menu yesterday, it’s because I want to use up what we have in our pantry before I buy more food. Tonight we are having soup and sandwiches, I have enough cans of soup in the cupboard for everybody to have something different!
