Menu Plan Monday Oct. 12

Each of these dinners is approximately 500 calories for one person. Multiply by the number of people you need to feed, remembering that your teenagers count as two people :)

  • Chicken roasted with carrots and onions in fat free chicken broth, have 3 ounces breast meat with 1 cup veggies, Instant mashed potatoes made with low fat buttermilk, one serving, 1 cup 1% milk
  • Fast Food Fix Taco Bell Mexican Pizza (for me), tacos for everyone else-has cheese so no milk needed, high cal so just water to drink
  • Spaghetti- sauce made with italian sausage (same amount of fat as ground round!), Hunt’s spaghetti sauce, diced tomatoes and tomato paste, 1 cup 1% milk
  • Tuna Noodle Casserole- made with low fat cream of mushroom soup, 3/4 cup fat free evaporated milk, white tuna in water, served with 1 cup steamed green beans and 2 small canned buttermilk biscuits
  • Easy Salsa Chili (1 cup) served with 1 cup steamed green beans, Jiffy Corn Muffin, 1 tbsp. ICBINB,  1 cup 1% milk

  1. How do you possibly find time to PLAN a menu, let along cook them! LOL Seriously though, sounds good!

    Dawn- Well, to be honest, the planning part is easy. It’s getting to the grocery store to actually buy everything needed to make everything in the plan and then actually MAKING it that’s the challenge! But I keep trying ;)
