Do you shop at Sam’s Club or Costco, or somewhere else that sells “warehouse packages” of meat? If so, you need Fix, Freeze, Feast: Prepare in Bulk and Enjoy by the Serving – More than 125 Recipes by Katie Neville and Lindsay Tkacsik. With more than 125 recipes, this is the only cookbook I’ve ever seen that specifically addresses what to do with bulk meat purchases, what the book calls the Tray Pack Method.
The first section explains how to plan and shop for ingredients, setting up your kitchen for a bulk cooking section, cooking tips, and how to correct recipe mistakes. Then come the recipes! The book is divided into chapters like this:
- Chicken
- Beef
- Pork
- Meatless entrees, sides and soups
- Sauces, marinades and flavored butters
- Breakfast, snacks and sweets
- Printable inventory sheet and printable labels for each recipe
I like that the book lays flat either on the counter or in a Cookbook Holder (Clear) (8 1/2″H x 12″W x 3″D). I also like that the recipes build on each other-a batch of “Dave’s Swamp Blues Barbecued Chicken” becomes Dave’s Skillet Hash and Dave’s Barbecued Chicken Pizza. Best of all, even though most of the recipes call for a lot of ingredients, these are “home cook” recipes. There are no gourmet ingredients you have to buy online or at specialty stores, no fancy cooking techniques or equipment. You buy your Tray Pack meat, pick a recipe, prepare it for the freezer, then pull it out when you are ready. The book tells you everything you’ll need to do to get your entree from freezer to table.
