Menu Monday 2-6-12

Happy Monday, everyone!  I have bronchitis which leaves me out of breath when I do pretty much anything, so I’ve been very grateful for my husband’s willingness to cook dinner this past week.  He even went grocery shopping today, with it being Sunday AND the Super Bowl, I can’t believe he got out of Meijers in one piece! lol

I’m washing my hands constantly and coughing into my elbow, but I still worry about preparing food, so I’m also grateful for my 15 and 13 year old sons, who grumble about being asked to help with dinner but can do pretty much anything in the kitchen with supervision.

These are the meals I planned for this week:

 

Turkey Sausage Bean Soup, biscuits ( my husband love love LOVES this soup!)

Manwich Sloppy Joes, frozen fries, salad

Easy Italian Pasta Bake (made with italian sausage instead of ground beef),  garlic bread, steamed green peas

Hot Dogs/Bratwurst, baked beans

BLTs, chips with lipton onion soup chip dip

  • I hope you feel better! Being sick is never fun, especially when you still need to be productive.

    The menu looks good. My initial thought was to replace the turkey in the bean soup with spicy italian sausage. Just a thought, what do you think?

  • Eric – I’ve only ever made the recipe with brown and serve turkey sausage links, which I chop up into little bits. I would think you could substitute any kind of sausage though as long as the proportion stays the same. This is one of those soups that tastes even better the next day after it thickens up, too. Let me know if you make it and what you think!
