I’m only planning half a week of meals this week because I’m going out of town on Friday and my husband likes to hit the grocery store and make up his own meal plan when I’m not home. We’re also on a tight budget again this week, so I’ll be swinging by Aldi later [...]

We woke up this morning to an inch of snow here in mid-Michigan, which really isn’t a surprise. It’s been known to snow in June! Nevertheless, it put a chill in the air that made me reconsider my weekly menu. I want warm and comforting meals this week!
We’re on a super-tight budget, so [...]

This week’s menu plan is about using up what I already have. I went grocery shopping Friday afternoon but already had the weekend meals planned. I knew there was a bag of frozen boneless skinless chicken breast tenders in the freezer that I wanted to use up, so I looked for something “chicken helper” [...]
Elizabeth posted this in Menu Monday on January 31st, 2011 I have a really bad cold and both Ryan and Kaitlyn are sick too, so I’m really not even in the mood to cook. But, there’s a winter storm coming or so they say, that could dump up to a foot of snow on us by Wednesday. Which means I have to drag my sick [...]
Elizabeth posted this in Menu Monday on October 11th, 2010 Well, my dear MomCooks readers, this is going to be a very interesting week for me, food- and other-wise. First, I’m starting a 12 week, all-liquid diet called Optifast on Wednesday. And, my husband is leaving for England and Holland tomorrow and he’ll be gone for the next three weeks.
So, I decided to go [...]
Elizabeth posted this in Menu Monday on March 22nd, 2010 This week, I’m making two recipes from The Stocked Kitchen, an absolutely brilliant cookbook/pantry system I picked up at the Home Show in Chicago last weekend. The book, which has a spiral binding so it stands up or lays flat on the counter, contains over 300 recipes, all of which use only items on The [...]

My husband flew to Montreal this morning and he’ll be gone until Thursday night. When he’s not home, I cook things that the kids and I like but he doesn’t, so that’s reflected in this week’s menu. Here’s what I’m planning to make:
Monday: Cola Chicken with mashed potatoes and green beans
Tuesday: Easy [...]
How was everyone’s Thanksgiving? We had a slight mishap with our turkey – it sort of cooked way too long and dried out – but I discovered that turkey breast meat steamed in a covered container with a little water in the microwave tastes just fine covered with turkey gravy :) Even after having leftovers [...]

I’m posting this so late! We spent the day running errands and Chris treated us to lunch at Red Lobster thanks to a gift card he got from his boss for his birthday. It’s almost 7 pm and we haven’t even had dinner yet! Here’s what I’m thinking about making this week:
Monday- All [...]
